Christmas Baking

Hi guys! This week I ventured out of my baking comfort zone and decided to try Mince pies. I was having a quick look through my Tanya Bakes recipe book and found a pretty easy recipe so I thought I’d give it a go, it is Christmas time after all.

Firstly I made the dough for the pastry and crumbled the butter, lard and flour together with my fingers and then added water to create the dough.

I rolled this out and cut out 12 circles and 12 trees, as I wanted to use my new Christmas tree cutters from Lakeland.

I placed the circles in the muffin tin and pushed them in slightly. Then I spooned a heaped spoonful of mincemeat into each circle and then placed the cut out Christmas tree on top.

I cooked these for 20 minutes and then left them to cool.

To finish icing sugar shakes over the top. And I think they look fab!

They also taste delicious!

I also made some Christmas tree biscuits for the children I look after to decorate this week. I used the recipe for reindeer biscuits from Tanya Bakes as well but just adapted it. They a very scummy too!
